My Gluten Free Paella Mista

Paella is a rice-based dish, typical of the Spanish cuisine and which has its roots in the community of Valencia. There are different types of paella: Valencian paella, seafood paella and mixed paella. This is my gluten-free version of the Paella Mista (Mixed Paella).

Ingredients:

  • 4 chicken wings/thighs
  • 1 belly slice
  • 4squid
  • 2 spring onions
  • 1 garlic
  • 1 beef tomato
  • 1/2 red, 1/2 green, 1/2 yellow peppers
  • 1 glass white wine
  • 1/2 cup frozen peas
  • 150 g king prawns
  • salt, black pepper, cayenne
  • 1 teacup rice
  • saffron
  • olive oil

Start by coking the squid, bacon and chicken in a paella pan (oven proof) with olive oil. Keep the squid, bacon and chicken aside.

In the same pan, fry the spring onions, add the peppers, the beef tomato, garlic and white wine. Cook for 2 min and then add the frozen peas and king prawns and cook for 5 min more. Season with salt, black pepper and cayenne. Now, add the perviously cooked squid, bacon and chicken.

Add  the rice, 2 cups of water and the saffron and leave the rice to cook. If needed, add more water until the rice is cooked. Five min before finish, put some prawns and peppers on the top (you can also add some mussels) and cook for 5-10 more min in a pre heated oven at 180C.
